Drawing inspiration from his globe-trotting adventures and diverse culinary influences, Chef Hadrien has curated a 11-course tasting menu that redefines the concept of “fun dining”.
A Trip Through Memory Lane
This season, Chef Hadrien invites guests to join him on a nostalgic voyage through his memories, blending flavours from his childhood with influences from his travels to create a menu that is as personal as it is exquisite. From the playful Vegetable Oyster – inspired by his love-hate relationship towards conventional oysters, to the inventive Morning in Paris, a take on his daily Parisian-inspired breakfast, each dish is a testament to Chef Hadrien’s creativity and culinary ingenuity.
An Immersive Dining Experience
At Chez Wam’s Chef’s Table, guests are not just spectators; they are active participants in the culinary journey. Seated at the heart of the action, guests will enjoy a front-row view of Chef Hadrien and his team as they meticulously prepare each dish in the restaurant’s fully open kitchen. With only one seating per evening and a maximum of six guests, this intimate setting ensures an unforgettable and extremely immersive dining experience.
Collaboration with Myriam Calvo
In collaboration with acclaimed illustrator and ceramicist Myriam Calvo, Chez Wam presents a menu that is as visually stunning as it is delicious. Each dish is accompanied by a unique illustration – similar to a “Carnet de voyage” – instead of a written menu; allowing guests to engage with the items in a truly immersive way. From the Jellyfish to the decadent Montblanc, every dish has a story explained by Chef Hadrien that is as captivating as it is delicious.
Chef’s Table Details
Available exclusively on Tuesday at 8:15pm (starting from the 28th May), this unique dining experience is priced at AED 695 per person, inclusive of the 11 courses, water, tea and coffee. For those looking to elevate their experience, optional beverage pairings curated by Chef Hadrien and his bar team are available for an additional cost of AED 425 per person.
